Hi,
Is there a function that I can use when coding to Collapse all of the coding above & below a selected element so that the only coding I see is the selected element. For instance if I have a Form Tag that I want to edit & do not wish to see all of the other coding on the page, allowing me to focus only on the Form Tag.

You have to manually collapse code you don’t want to see. There is no automatic function.

There are a lot of collapsing/folding options - Ctrl+K-
might be helpful in this case.
The Command Palette doesn't display the fold/unfold options very clearly. In case you haven't come across the options, this is the complete list:
