Thanks for this tidbit. I too am in need of dynamic binding here. I also put in a feature request for the meta data key to be dynamic. The value is but not the meta data.

Dynamic Stripe Product meta data key

Anyway we can get a dynamic picker for the Stripe product meta data key? I'm looping through some custom attributes that are key and value fields and updating the product in Stripe. It works, but doesn't replace the key token. I just now noticed there isn't a data picker for the key just for the value.
